Sheer Khurma is a beloved dessert perfect for festive occasions like Eid. Instructions

1- Prepare the Nuts and Dates:

  • Soak almonds in water.
  • Peel and chop the almonds.
  • Chop the cashews.
  • Slice the pistachios.
  • Finely chop the dates.

2- Fry Nuts and Dates:

  • Heat 1 tablespoon of ghee in a medium non-stick frying pan over medium heat.
  • Add the chopped almonds, cashews, chironji, melon seeds, pistachios, and dates.
  • Fry until golden brown.
  • Remove and set aside.

3- Fry Vermicelli:

  • Add the remaining tablespoon of ghee to the same pan.
  • Add the vermicelli.
  • Fry until golden.
  • Set aside.

4- Boil Milk:

  • Bring the milk to a boil in a medium stainless steel pot.
  • Stir occasionally to prevent scorching.

5- Cook Vermicelli:

  • Add the fried vermicelli to the boiling milk.
  • Cook for a few minutes, stirring continuously until the vermicelli softens.
  • Ensure the milk thickens slightly.

6- Sweeten the Pudding:

  • Mix in the condensed milk or sugar.
  • Adjust sweetness to taste.

7- Add Aroma and Nuts:

  • Sprinkle in the cardamom powder.
  • Fold in the fried nuts and dates.
  • Stir well.

8- Optional Saffron:

  • Add a few saffron strands for extra aroma and color, if desired.

9- Simmer to Perfection:

  • Allow the Sheer Khurma to simmer on low heat for a few more minutes.
  • Stir occasionally until it achieves a creamy consistency.

10- Rest and Serve:
