Instructions

1- Prepare the Seafood:

  • Clean and debeard the shellfish if necessary.
  • Rinse the fish fillets under cold water and pat dry with paper towels. Cut into bite-sized cubes.

2- Marinate:

  • In a large glass or ceramic bowl, combine the seafood, garlic, lemon juice, cilantro, chili pepper, and a pinch of salt. If using, add white wine.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

3- Cook:

  • In a large skillet e.g., T-fal Ultimate Hard Anodized Nonstick, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  • Increase the heat to medium-high and add the marinated seafood mixture. Cook until the shellfish open and the fish is opaque, about 8-10 minutes. Discard any shellfish that do not open.

4- Finish:

  • Remove from heat and stir in the tomato juice. Let it sit for 5 minutes to absorb the flavors.
  • Gently fold in the avocado cubes.

5- Serve:

  • Ladle the Mariscal into bowls and serve immediately, garnished with additional cilantro if desired.
