πŸ«’ Olive oil 1-2 tablespoons per fish (brand not specified)

Instructions

1- Prepare the Fish:

  • Clean the 2 whole sea bass by removing the guts.
  • Score the fish by making 3-4 diagonal cuts on both sides.

2- Seasoning:

  • Lay a large sheet of parchment paper on your work surface.
  • Season the fish generously with salt, ensuring to rub it inside the cuts and the belly cavity.
  • Sprinkle black pepper and oregano over the fish, both externally and internally.
  • Insert the garlic cloves and lemon slices into the cuts and belly of each fish.

3- Create the Vegetable Bed:

  • On the parchment paper, spread a layer of sliced onions, green bell peppers, and cherry tomatoes.

4- Assembly:

  • Place each seasoned fish atop its prepared vegetable bed.
  • Add extra slices of onion, green bell pepper, tomatoes, garlic, and lemon on top and around the fish.
  • Drizzle with olive oil generously.

5- Wrap and Bake:

  • Fold the parchment paper over the fish and vegetables, twisting the edges to seal like a candy wrapper.
  • Wrap the parchment-sealed package tightly in aluminum foil.
  • Preheat your oven to 200Β°C (392Β°F).
  • Place the foil-wrapped fish on a baking tray.
  • Bake for 40-45 minutes.

6- Finish and Serve:

  • After baking, carefully unwrap the fish.
  • For a crispier finish, return to the oven for an additional 5-7 minutes, if desired.
  • Serve immediately, either directly from the parchment or transferred onto a serving plate, with the baked vegetables.
