Ingredients

🧅 2 medium red onions, sliced
🌱 1 bunch of green onions, chopped
🧄 4 cloves of garlic, minced
🥕 2 large carrots, peeled and sliced
🌶 1 green bell pepper, chopped
🌶 1 red bell pepper, chopped
🍅 4 ripe tomatoes, chopped
🍺 500ml dark beer e.g., Guinness
🍖 1.5 kg pork shoulder (bondiola), cubed
🧂 Salt
⚫️ Black pepper, freshly ground
🌿 1 teaspoon dried thyme
🍃 2 bay leaves
🌿 Fresh parsley, chopped, for garnish

Instructions

1- Prep the Vegetables:

  • Slice the red onions and green onions. Mince the garlic cloves.
  • Peel and slice the carrots.
  • Chop the green and red bell peppers.
  • Dice the tomatoes and set all vegetables aside.

2- Sauté Aromatics:

  • Heat a large cooking disc over medium heat.
  • Add a splash of olive oil.
  • Sauté the red onions and garlic until fragrant and soft, about 5 minutes.

3- Cook the Vegetables:

  • Add the carrots, green and red bell peppers, and tomatoes to the disc.
  • Stir occasionally and let them cook for another 10 minutes until they begin to soften.

4- Add the Pork:

  • Add the cubed pork shoulder to the disc with the vegetables.
  • Cook on all sides until browned. This should take about 10 minutes.

5- Season and Simmer:

  • Pour the dark beer over the pork and vegetables.
  • Add salt, pepper, thyme, and bay leaves. Stir well to combine.

6- Slow Cook:

  • Reduce the heat to low and cover the disc.
  • Allow the pork to simmer for about 2 hours, stirring occasionally.
  • The meat should become tender, and the flavors will meld beautifully with the rich beer.

7- Finish and Serve:

  • Remove the bay leaves.
  • Garnish with freshly chopped parsley before serving.
  • Enjoy with crusty bread or your favorite side.
