Discover the authentic taste of Bolivia with this traditional marraqueta bread recipe. Known for its crispy crust and soft, airy interior, marraqueta is perfect for any meal or just as a delightful snack. This recipe will guide you step-by-step to recreate this delicious bread at home.

Ingredients

💧 1 1/2 cups of warm water
🌾 4 cups of flour, King Arthur All-Purpose Flour recommended
🧂 1/2 teaspoon of salt, Morton Salt preferred
🍬 1 tablespoon of sugar, Domino Sugar recommended
🍞 3 teaspoons of yeast, Fleischmann's Active Dry Yeast suggested

Instructions

1- Activate the Yeast:

  • In a small bowl, mix the warm water with the sugar.
  • Sprinkle the yeast over the top and let it sit for about 5 minutes, or until it becomes frothy.

2- Prepare the Dough:

  • In a large mixing bowl, combine the flour and salt.
  • Gradually add the yeast mixture to the flour while stirring with a wooden spoon or an electric mixer fitted with a dough hook, KitchenAid Mixer recommended.
  • Knead the dough for about 10 minutes, or until it becomes smooth and elastic. If using an electric mixer, set the speed to medium.

3- First Rise:

  • Transfer the dough to a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 1.5 hours or until it has doubled in size.

4- Shape the Bread:

  • Punch down the dough gently.
  • Divide it into smaller portions for desired size of individual rolls.
  • Shape each portion into a tight ball and place them on a baking sheet lined with parchment paper.

5- Second Rise:

  • Cover the rolls and let them rise for an additional 30 minutes.

6- Preheat and Bake:

  • Preheat your oven to 400°F (200°C).
  • Before placing the bread in the oven, score the tops of each roll with a sharp knife, Wüsthof Classic 6” Knife recommended, to help them expand and develop that classic marraqueta look.
  • Bake for about 18-20 minutes or until the rolls are golden brown and sound hollow when tapped on the bottom.

7- Cool and Serve:

  • Remove from the oven and let them cool on a wire rack, Nordic Ware Cooling Rack recommended.
  • Serve warm or at room temperature.
