Ingredients

Instructions

1- Prep the Peanuts:

  • In a blender or food processor, grind the raw peanuts until they form a smooth paste. Set aside.

2- Cook the Chicken:

  • Heat 1 tablespoon of Mazola® Corn Oil in a large pot over medium heat.
  • Add the chicken cubes and cook until they are browned on all sides. Remove the chicken and set aside.

3- Prepare the Base:

  • In the same pot, add the remaining oil, onions, and garlic. Sauté until the onions are translucent.
  • Add the diced carrot and potato; cook for about 5 minutes.

4- Combine the Ingredients:

  • Return the chicken to the pot. Stir in the peanut paste, chicken broth, and chili powder.
  • Simmer over low heat, stirring occasionally, for about 20-25 minutes or until the vegetables are tender.

5- Final Touches:

  • Add the corn and simmer for another 5 minutes.
  • Season with salt to taste. Stir in chopped parsley and cilantro before serving.

6- Serve:

  • Ladle the soup into bowls and garnish with additional chopped parsley or cilantro if desired.
