Instructions

1- Prepare the Filling:

  • Drain the canned corn thoroughly to ensure your dukunu does not become too moist.

2- Blend Ingredients:

  • In a Blendtec blender, add the drained corn, salt, melted butter, and cornmeal. Blend until the mixture is smooth, with a slightly coarse texture to mimic the authentic dukunu feel.

3- Wrap and Shape:

  • Cut several pieces of aluminum foil, each about 10x10 inches.
  • Spoon about half a cup of the corn mixture onto the center of each foil piece. Fold and seal the foil carefully to form a neat packet, ensuring no mixture seeps out.

4- Cook:

  • In a large pot, bring water to a boil.
  • Carefully place the foil packets into the boiling water. Reduce the heat to a simmer. Cover and let them boil for 40 minutes.

5- Serve:

  • Carefully remove them from the pot using tongs. Let them cool slightly before serving.
  • The dukunu can be served as is or as a side to your favorite stew.
