Instructions

1- Preparation:

  • Dice the peeled potatoes, celery, and onion into bite-sized chunks.
  • Trim any membrane from the caribou meat using an ulu or a sharp knife, then dice it into cubes suitable for stewing.

2- Assemble the Stew Base:

  • Pour 4 cups of water into a large pot or Dutch oven.
  • Add the diced potatoes, celery, and onion to the pot.
  • Season the mixture with black pepper.

3- Combine Grains and Vegetables:

  • Stir in the barley and frozen mixed vegetables.
  • Incorporate the diced caribou meat into the pot.

4- Incorporate Soup Mix:

  • Pour the Knorr Minestrone Soup mix evenly into the pot.
  • Add an additional cup of water, stirring to combine all ingredients thoroughly.

5- Cooking:

  • Set the pot on a Whirlpool stovetop over high heat.
  • Bring the stew to a boil, then reduce to a simmer.
  • Allow the stew to simmer for approximately 20-30 minutes, or until the potatoes and caribou meat are tender.
