Instructions

1- Prepare the Meats:

  • Unpackage and place the cow's feet and tripe in a large metal bowl.
  • Rinse with Heinz white vinegar and water to clean thoroughly. Drain the excess water.

2- Cut the Meats:

  • On the cutting board, dice the tripe and cut the cow's feet to preferred sizes.

3- Pressure Cook the Meats:

  • Transfer the meats to the Power Pressure Cooker XL.
  • Add onion slices, cilantro, and oregano leaves.
  • Fill with water, covering the ingredients.
  • Secure the lid, set to "seal," and use the "Chicken/Meat" setting for 1 hour. Repeat twice for a total of 3 hours.

4- Finish on Stovetop:

  • Open the cooker and transfer contents carefully to a large pot.
  • Bring to boil on a gas burner.

5- Add Vegetables and Seasoning:

  • Add potato chunks and okra halves.
  • Stir in salt, black pepper, and recado or paprika.
  • Simmer until vegetables soften and stew reduces for a robust flavor.

6- Serve:

  • Ladle the hot soup into bowls and enjoy!
