Instructions

1- Prepare the Yuca:

  • Cut the yuca into small, manageable pieces.
  • Peel the yuca by making a lateral cut along the skin, then peeling it off.

2- Cook the Yuca:

  • In a pot, bring 1 liter of water and 1/2 teaspoon of salt to a boil.
  • Add the peeled yuca pieces to the boiling water and cook until they are tender and soft.
  • Remove the cooked yuca from the water and transfer it to a bowl.

3- Mash and Mix:

  • Using a fork, mash the yuca thoroughly.
  • Add 1 tablespoon of olive oil to the mashed yuca and mix it in until well combined.

4- Assemble the Masaco:

  • Grate 175 grams of semi-cured cheese using a box grater.
  • Heat a frying pan over medium heat and add a small amount of olive oil.
  • Place a round food mold/ring in the pan.
  • Add a layer of mashed yuca to the bottom of the mold, pressing it down slightly.
  • Place a portion of grated cheese in the center, on top of the yuca layer.
  • Cover the cheese with another layer of mashed yuca, pressing gently to form a patty.

5- Cook the Masaco:

  • Carefully remove the food mold/ring, leaving the formed masaco patty in the pan.
  • Cook the masaco patty on both sides for a few minutes until golden brown and crispy.
  • Repeat the process for the remaining masaco portions.
