Ingredients

๐Ÿž 4-8 slices milk bread

๐Ÿฅ› Approx. 750ml - 1 liter full-fat milk

๐Ÿฌ ยฝ - ยพ cup sugar

๐ŸŒผ A small pinch saffron strands

๐ŸŒฟ 5-6 green cardamom pods, crushed into powder

๐Ÿฎ 1-2 tablespoons vanilla flavored custard powder

๐Ÿ’ง A few tablespoons of water


Instructions

1- Prepare Bread Patties:

  • Use a round cookie cutter or glass to cut circular shapes from each slice of milk bread.

2- Chop Nuts:

  • Finely chop the almonds, cashews, and pistachios. Set aside.

3- Assemble Bread "Sandwiches":

  • Take one bread circle, sprinkle a small amount of the mixed nuts on it, and then place another bread circle on top, pressing gently to form a mini sandwich. Repeat for the remaining bread slices.

4- Prepare Milk Base (Rabri):

  • In a large pot, pour the milk and bring it to a boil over medium heat. Reduce heat to a simmer once it boils.

5- Sweetener & Nuts:

  • Add sugar to the simmering milk, stirring until dissolved. Incorporate a portion of the chopped nuts, saving the rest for garnish.

6- Flavor Infusion:

  • Stir in saffron strands for rich color and aroma. Crush the cardamom pods and add the ground powder to the milk mixture.

7- Thicken Milk with Custard:

  • In a bowl, mix the custard powder with water to form a lump-free slurry. Gradually add this to the simmering milk mixture, stirring continuously to avoid lumps.

8- Achieve Desired Consistency:

  • Let the milk mixture simmer until it thickens to a creamy rabri-like consistency, which should coat the back of a spoon.

9- Assemble Rasmalai:

  • Arrange the prepared bread sandwiches in a serving bowl or individual bowls.

10- Pour & Garnish:

  • Generously ladle the thickened milk (rabri) over the bread sandwiches, ensuring they are completely covered. Garnish with the remaining chopped nuts and a few saffron strands.

Cook Time: 15 minutes

Total Time: 25 minutes + chilling time
