Instructions

1- Marinate the Surubí:

  • Place the surubí loin in a glass mixing bowl.
  • Add minced garlic, lemon juice, salt, pink peppercorns, and mustard. Mix well to coat the fish evenly.
  • Cover with plastic wrap and refrigerate overnight for maximum flavor infusion.

2- Prepare the Vegetable Base:

  • Par-boil the potatoes for about 10 minutes, then slice into rounds.
  • Heat cooking oil in a pan over medium heat.
  • Sauté the onions, tomatoes, and bell peppers. Season with salt, pepper, and oregano.
  • Cook for 10-15 minutes or until vegetables are softened.

3- Assemble the Dish:
