Mashawa is a hearty and wholesome Afghan mixed bean stew that combines chickpeas, red kidney beans, barley, and urad mung lentils with a rich blend of spices and aromatic ingredients. Ingredients

🌰 1.5 cups mixed chickpeas, soaked for 2 hours in hot water
🫘 1.5 cups mixed red kidney beans, soaked for 2 hours in hot water
🌾 1.5 cups barley, soaked for 2 hours in hot water
🌿 1.5 cups whole green urad mung lentil, soaked in water and boiled
🥄 6-8 tablespoons oil, any neutral cooking oil
🧅 2 medium onions, sliced
🧄 2 tablespoons Laziza International Garlic & Ginger Paste
🍅 2 medium tomatoes, diced
✨ 1/2 teaspoon turmeric powder
🧂 Salt
🌶️ 1 green chili pepper, chopped
🍃 Fresh coriander/cilantro, chopped
💧 2-3 cups hot water
🥛 1/2 cup Astro Original 2% Yogurt Nature


Instructions

1- Prepare Ingredients:

  • Soak the chickpeas, red kidney beans, and barley together in hot water for 2 hours.
  • Separately soak the whole green urad mung lentils in water.

2- Sauté Onions:

  • In a pressure cooker, heat 6-8 tablespoons of oil over medium heat.
  • Add the sliced onions and sauté for about 6 minutes until golden brown.

3- Add Aromatics:

  • Stir in 2 tablespoons of Laziza Garlic & Ginger Paste, letting it blend with the onions.

4- Cook Tomatoes and Spices:

  • Add diced tomatoes and cook until they become mushy.
  • Mix in 1/2 teaspoon of turmeric powder and salt.

5- Combine Beans and Barley:

  • Add the pre-soaked chickpeas, red kidney beans, and barley to the pressure cooker.
  • Stir in chopped fresh coriander and chopped green chili peppers.

6- Pressure Cook:

  • Pour 2-3 cups of hot water over the mixture.
  • Close the pressure cooker, cook for 15-20 minutes (around 8-10 whistles).
  • For a regular pot, simmer for 45-60 minutes until tender.

7- Cook Lentils Separately:

  • Simultaneously, boil the soaked whole green urad mung lentils in a separate Lagostina saucepan for 15 minutes, or until soft.

8- Combine and Finish:

  • Once the pressure cooker releases steam, open and check consistency. Add extra water if needed.
  • Stir in the boiled lentils.

9- Add Yogurt and Serve:

  • Mix 1/2 cup of Astro Original Yogurt Nature, stirring well as you bring the stew to a boil.
