Ingredients
For the Dough:

๐ 2 cups all-purpose flour
๐ง 1 tbsp salt

For the Filling:
๐ฟ 2 branches of leeks or chives
๐ง Salt
๐ถ๏ธ Pepper
๐ฟ 1 tsp coriander seeds ground
๐ถ๏ธ 1/2 tsp chili flakes
๐ซ 1 tbsp olive oil
For the Sauce:
๐ซ 1 cup canned kidney beans Goya Kidney Beans

1 large onion

1 cup tomato purรฉe Mutti Tomato Purรฉe
๐ง Salt
๐ถ๏ธ Pepper
For the Yogurt Sauce:
๐ฅ 1 cup Greek yogurt FAGE Total Greek Yogurt
๐ง Salt
๐ง 2 cloves garlic crushed
For Frying and Garnish:
๐ง 6 cloves garlic
๐ซ Olive oil
๐ฟ 1 tbsp dry mint
๐ถ๏ธ 1 tsp chili flakes
Instructions
1- Prepare the Dough:
- In a mixing bowl, combine 2 cups of all-purpose flour, 1 egg, and 1 tbsp of salt.
- Gradually add cold water while mixing until a medium-soft dough forms.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
2- Prepare the Filling:
- Thoroughly wash and finely chop the leeks or chives.
- In another bowl, mix the chopped leeks with salt, pepper, ground coriander seeds, chili flakes, and olive oil until well combined.
3- Roll Out the Dough:
- Roll out the rested dough using a rolling pin or a pasta machine into a thin sheet.
- Cut the dough into circles using a cookie cutter or a glass.
- Place a small amount of leek filling in the center of each circle, moisten the edges with water, fold over, and seal tightly.
4- Make the Sauce:
- Sautรฉ one finely chopped onion in oil over medium heat until translucent.
- Add 1 cup of tomato purรฉe, salt, and pepper, then stir in the kidney beans. Cook until the sauce slightly thickens.
5- Prepare the Yogurt Sauce:
- In a bowl, mix Greek yogurt with a pinch of salt and crushed garlic until smooth.
6- Fry the Garlic:
- In a small pan, heat olive oil and fry 6 cloves of garlic until lightly golden. Be careful not to overcook them.
7- Cook the Dumplings:
- Bring a large pot of water to a boil.
- Gently add the dumplings and cook for 3โ5 minutes or until they float and are cooked through. Drain well.
8- Assemble and Garnish:
- Layer a serving dish with creamy yogurt sauce, followed by a layer of dumplings.
- Top with more yogurt sauce, kidney bean sauce, and garnish with fried garlic, dry mint, and chili flakes.
