For the Yogurt Sauce:
๐Ÿฅ› 1 cup Greek yogurt FAGE Total Greek Yogurt
๐Ÿง‚ Salt
๐Ÿง„ 2 cloves garlic crushed

For Frying and Garnish:
๐Ÿง„ 6 cloves garlic
๐Ÿซ’ Olive oil
๐ŸŒฟ 1 tbsp dry mint
๐ŸŒถ๏ธ 1 tsp chili flakes


Instructions

1- Prepare the Dough:

  • In a mixing bowl, combine 2 cups of all-purpose flour, 1 egg, and 1 tbsp of salt.
  • Gradually add cold water while mixing until a medium-soft dough forms.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.

2- Prepare the Filling:

  • Thoroughly wash and finely chop the leeks or chives.
  • In another bowl, mix the chopped leeks with salt, pepper, ground coriander seeds, chili flakes, and olive oil until well combined.

3- Roll Out the Dough:

  • Roll out the rested dough using a rolling pin or a pasta machine into a thin sheet.
  • Cut the dough into circles using a cookie cutter or a glass.
  • Place a small amount of leek filling in the center of each circle, moisten the edges with water, fold over, and seal tightly.

4- Make the Sauce:

  • Sautรฉ one finely chopped onion in oil over medium heat until translucent.
  • Add 1 cup of tomato purรฉe, salt, and pepper, then stir in the kidney beans. Cook until the sauce slightly thickens.

5- Prepare the Yogurt Sauce:

  • In a bowl, mix Greek yogurt with a pinch of salt and crushed garlic until smooth.

6- Fry the Garlic:

  • In a small pan, heat olive oil and fry 6 cloves of garlic until lightly golden. Be careful not to overcook them.

7- Cook the Dumplings:

  • Bring a large pot of water to a boil.
  • Gently add the dumplings and cook for 3โ€“5 minutes or until they float and are cooked through. Drain well.

8- Assemble and Garnish:

  • Layer a serving dish with creamy yogurt sauce, followed by a layer of dumplings.
  • Top with more yogurt sauce, kidney bean sauce, and garnish with fried garlic, dry mint, and chili flakes.
