Ingredients
π₯£ 2 ΒΌ cups all-purpose flour
π₯ 1 teaspoon baking powder

π§΄ Β½ cup shortening
π₯ 1 egg
π§ 2/3 cup water
π₯© Β½ pound ground beef
π§ Β½ teaspoon salt
π Β½ teaspoon black pepper
πΏ Β½ teaspoon thyme

ΒΌ cup onion, finely chopped
π« ΒΌ cup green bell pepper, finely chopped
π§ 1 clove garlic, finely chopped
π¦ 1 teaspoon recado or achiote paste
π Water to dissolve recado
πΆ 1 teaspoon Worcestershire sauce

1 tablespoon ketchup
π§ 1 Β½ cups water
π½ 1 tablespoon cornstarch
π§ 1 tablespoon water
πΆοΈ Habanero (optional)
Instructions
1- Prepare the Dough:
- In a mixing bowl, combine the flour, baking powder, and salt. Add the shortening and mix until the mixture resembles coarse crumbs.
- Beat the egg with 2/3 cup of water and gradually add to the flour mixture. Knead until a smooth dough forms. Cover with a cloth and let it rest while you prepare the filling.
2- Make the Filling:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add salt, black pepper, thyme, onion, green bell pepper, and garlic to the beef. Cook for 5 minutes, stirring occasionally.
- Dissolve recado in a little water and add to the beef mixture.
- Stir in Worcestershire sauce, ketchup, and 1 Β½ cups of water. Bring to a simmer.
- Mix cornstarch with 1 tablespoon of water to form a slurry. Add to the beef mixture and cook until thickened. If using habanero, add it now for a spicy kick.
3- Assemble the Pies:
- Preheat the oven to 375Β°F (190Β°C).
- Roll out the dough on a floured surface to about 1/8 inch thick. Use a Wilton cookie cutter to cut out circular dough pieces.
- Place a spoonful of filling onto half of the circles. Cover with another piece of dough and crimp the edges with a fork to seal.
- Place pies on a baking sheet and bake for 25 minutes, or until golden brown.
4- Serve:
- Let the pies cool slightly before serving. Enjoy them warm with your favorite hot sauce on the side.
