Instructions

1- Prepare the Dough:

  • In a mixing bowl, combine the flour, baking powder, and salt. Add the shortening and mix until the mixture resembles coarse crumbs.
  • Beat the egg with 2/3 cup of water and gradually add to the flour mixture. Knead until a smooth dough forms. Cover with a cloth and let it rest while you prepare the filling.

2- Make the Filling:

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add salt, black pepper, thyme, onion, green bell pepper, and garlic to the beef. Cook for 5 minutes, stirring occasionally.
  • Dissolve recado in a little water and add to the beef mixture.
  • Stir in Worcestershire sauce, ketchup, and 1 Β½ cups of water. Bring to a simmer.
  • Mix cornstarch with 1 tablespoon of water to form a slurry. Add to the beef mixture and cook until thickened. If using habanero, add it now for a spicy kick.

3- Assemble the Pies:

  • Preheat the oven to 375Β°F (190Β°C).
  • Roll out the dough on a floured surface to about 1/8 inch thick. Use a Wilton cookie cutter to cut out circular dough pieces.
  • Place a spoonful of filling onto half of the circles. Cover with another piece of dough and crimp the edges with a fork to seal.
  • Place pies on a baking sheet and bake for 25 minutes, or until golden brown.

4- Serve:

  • Let the pies cool slightly before serving. Enjoy them warm with your favorite hot sauce on the side.
