Discover the freshness of the Northwest Territories with this Citrus Walleye Ceviche. Inspired by a unique shore lunch enjoyed on the Mackenzie River, this dish features fresh walleye, delicately cooked with citrus and vinegar. It's a wild and unforgettable experience that captures the essence of Canada's pristine waters.

Ingredients

๐ŸŸ 1 pound fresh wild-caught walleye fillets
๐Ÿ‹ 1 cup freshly squeezed lime juice
๐ŸŠ 1/2 cup freshly squeezed orange juice
๐Ÿง… 1/2 red onion, thinly sliced
๐ŸŒถ๏ธ 1 jalapeรฑo pepper, seeded and finely chopped
๐ŸŒฟ 1/4 cup fresh cilantro, chopped
๐Ÿ… 1 medium tomato, diced
๐Ÿง‚ 1 teaspoon sea salt
๐ŸŒฝ Corn chips, to serve

Instructions

1- Prepare the Fish:

  • Begin by cutting the walleye fillets into small, bite-sized pieces. Ensure that any bones and skin are removed.

2- Marinate:

  • In a large glass or stainless steel bowl, combine the lime and orange juices. Add the walleye pieces to the juice mixture, making sure the fish is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 45 minutes to 1 hour, or until the fish is opaque and slightly firm.

3- Mix Vegetables:

  • While the fish is marinating, prepare the vegetables. In a separate bowl, mix together the red onion, jalapeรฑo pepper, cilantro, and tomato.

4- Combine Ingredients:

  • Once the fish has marinated, drain about half of the citrus juice. Add the vegetable mixture to the fish, gently tossing to combine. Season with sea salt to taste.

5- Serve:

  • Serve the ceviche immediately with corn chips on the side, allowing diners to scoop the ceviche onto the chips.
