Instructions

1- Prepare the Dough:

  • In a large cream-colored ceramic mixing bowl, combine 500g of self-rising flour and 1/2 tablespoon of salt.

2- Add Liquids:

  • Form a well in the center and add 1 tablespoon of oil and 250ml of warm water.

3- Mix Ingredients:

  • Gradually mix the ingredients by hand, bringing the flour into the liquid until it forms a cohesive dough.

4- Knead the Dough:

  • Transfer the dough to a lightly floured surface and knead vigorously for 10 minutes until smooth and elastic.

5- Rest the Dough:

  • Allow the dough to rest for a few minutes.

6- Divide Dough:

  • Divide into 6-8 evenly-sized balls.

7- Roll Out Dough:

  • Using a wooden rolling pin, roll each ball into a thin, round, or oval shape.

8- Prepare for Frying:

  • Make a small, 1-inch slit in the center with a kitchen knife.

9- Heat Oil:

  • Heat a generous amount of cooking oil in a red enameled cast iron pot (ATMA) over medium-high heat until very hot.

10- Fry Dough:
- Fry one or two dough pieces at a time, flipping once, until golden brown on both sides.

11- Drain and Coat:
- Remove and drain on paper towels.
- Immediately coat with sugar or other desired toppings while still hot.

12- Repeat:
- Repeat for the remaining dough pieces.
