Ingredients

๐Ÿ‘ 1/2 kg Mocochinchi balls dehydrated peaches
๐Ÿฌ 1 and 1/2 cups Brown sugar divided
๐Ÿ’ง 2 liters Water for Mocochinchi syrup
๐ŸŒฟ 1 Cinnamon stick for Mocochinchi syrup
๐ŸŒธ 2 Cloves for Mocochinchi syrup
๐Ÿฌ 1 and 1/2 cups White sugar for caramel
๐Ÿ’ง 5 liters Water for caramel refreshment
๐ŸŒฟ 1 Cinnamon stick for caramel refreshment

Instructions

1- Make the Mocochinchi Syrup:

  • Soak the mocochinchi balls in 2 liters of water with half the brown sugar overnight.
  • Transfer the soaked peaches and water to a pot, add the remainder of the initial brown sugar, cinnamon stick, and cloves.
  • Bring to a boil until peaches are semi-soft, then add the remaining brown sugar.
  • Continue boiling until peaches are soft and the syrup is lightly viscous.
  • Remove from heat, allow to cool, and then refrigerate.

2- Prepare the Caramel Refreshment Base:

  • In another pot, melt the white sugar over medium heat until golden brown.
  • Carefully pour in 5 liters of water, then add cinnamon and cloves.
  • Boil while stirring until caramel dissolves fully into the water.
  • Remove from heat, let the mixture cool completely, and then refrigerate.

3- Assemble and Serve:

  • Once both mixtures are cold, place mocochinchi balls with some syrup in a glass.
  • Pour the cold caramel liquid over them.
  • Serve immediately while chilled.
