Ingredients

For the Dough:

🍯 200g lard or substitute with melted butter
πŸ₯š 2 whole eggs
🍳 3 egg yolks
πŸ§‚ 1 teaspoon salt
πŸ₯› 500ml Β½ liter milk
✨ 10g 1 tablespoon Royal Baking Powder
πŸ₯„ 10g Β½ tablespoon baking soda optional

For the Filling:
πŸ§€ 450g cheese for grating preferably a semi-hard cheese like mozzarella
🌢️ A sprinkle of ground red pepper ají molido colorado
πŸ₯š 1 egg white for sealing
πŸ–ŒοΈ 1 egg for egg wash

Instructions

1- Prepare the Dough:

  • In a large mixing bowl, combine πŸ’Ό all-purpose flour, 🍬 sugar, and ✨ Royal Baking Powder. Stir well to evenly distribute the dry ingredients.
  • Add in the 🍯 lard, πŸ₯š whole eggs, 🍳 egg yolks, and πŸ§‚ salt. Gradually pour in the πŸ₯› milk while mixing until a dough begins to form.
  • Knead the dough on a lightly floured surface until it is smooth and elastic. This should take about 10 minutes. Cover the dough with a damp cloth and let it rest for about 30 minutes.

2- Prepare the Filling:

  • Grate the πŸ§€ cheese and set aside.
  • Roll out the rested dough on a floured surface to about a ΒΌ-inch thickness. Cut it into strips approximately 10 inches long and 4 inches wide.

  • Place a generous amount of grated πŸ§€ cheese along one long edge of each dough strip. Sprinkle lightly with 🌢️ ground red pepper for added flavor.
  • Brush the opposite edge of the strip with πŸ₯š egg white to help seal the dough.
  • Carefully roll the dough strip, starting from the edge with the cheese, into a tight cylinder. Press the edges to ensure it is sealed.

4- Bake:

  • Preheat the oven to 180Β°C 350Β°F. Line a baking sheet with parchment paper.
  • Place the rolls onto the baking sheet, spacing them at least an inch apart.
  • Brush each roll with the πŸ–ŒοΈ beaten egg to give them a glossy finish.
  • Bake in the preheated oven for 20-25 minutes or until the rolls are golden brown and the cheese is bubbly.

5- Serve:
