Instructions

2- Add Water and Seasonings:

  • Pour approximately 8 cups of water into the pot using a Pyrex measuring cup.
  • Add the chopped garlic, bay leaves, and butter to the pot.

3- Cook the Peas:

  • Set the stove to medium heat and begin cooking the split peas.
  • Allow the split peas to cook for 1.5 to 2 hours, adding more water after about 45 minutes if necessary.

4- Prepare the Pig's Tails:

  • In a separate process, pre-boil the cured pig's tails twice, discarding the water after the first boil to remove excess salt.

5- Incorporate Pig's Tails:

  • Once the split peas are softened, add the pre-boiled pig's tails to the pot.
  • Cook the mixture for an additional 45 minutes until the split peas are fully soft and mashed.

6- SautΓ© Aromatics:

  • Meanwhile, heat coconut oil in a small frying pan.
  • SautΓ© the sliced onions and herb mix in the hot oil until they become aromatic.

7- Combine and Season:
