Instructions

1- Prepare the Base:

  • Heat the sunflower oil in a large non-stick wok or pan over medium heat.

2- Add Aromatics:

  • Stir in the garlic and cook for an additional 2 minutes until fragrant.

3- Spice it Up:

  • Mix in the red chili powder, salt, and curry powder.
  • Stir well for about a minute to release the spices' aromas.

4- Incorporate Tomatoes:

  • Add the halved cherry tomatoes and fry for 3 minutes.
  • Allow the flavors to meld.

5- Add Mung Beans:

  • Introduce the washed and soaked mung beans into the pan.
  • Mix thoroughly.

6- Simmer Mixture:
