🌾 220g All-purpose Flour
🥄 1 teaspoon Baking Powder
🧂 Approximately 1/4 teaspoon Salt
🥛 40g Milk
🌻 25g Vegetable Oil

Instructions

1- Prepare the Cake Pan:

  • Oil the bottom of a RÖSLE springform cake pan.
  • Fold parchment paper into a triangle and cut to fit the pan. Place it at the bottom and oil the paper and sides of the pan. Set aside.

2- Make the Cake:

  • In a Kenwood stand mixer with a paddle attachment, beat 130g butter and 165g sugar on high for 2 minutes until light and fluffy.
  • Add the eggs one at a time, mixing for 2 minutes each. Scrape down the bowl frequently.
  • Add half of the flour, 1 teaspoon baking powder, and 1/4 teaspoon salt. Mix gently by hand until just combined.
  • Mix in 40g milk, 25g vegetable oil, and 1 teaspoon vanilla extract.
  • Add the remaining flour and mix gently.
  • Pour the batter into the prepared pan, smoothing the top.
  • Bake in a Siemens oven at 185°C (365°F) for 20 to 25 minutes or until a toothpick comes out clean.
  • Let it cool completely on a wire rack.

3- Prepare the Whipped Cream:

  • In a mixing bowl, combine 1 deciliter Vispgrädde heavy cream, 1 tablespoon powdered sugar, and a sprinkle of vanilla bean powder if using.
  • Whisk until the cream is stiff but not grainy.

4- Assemble the Cake:

  • Transfer the cooled cake to a cake stand or serving plate.
  • Spread the whipped cream over the cake, creating a slightly hollowed center.
  • Decoratively arrange halved strawberries and scatter fresh elderflower blossoms on top.
