π§ 1 cup Water (approximately 240ml)
π§ 3 cups Water for boiling (approximately 720ml)
πΏ Ground Cinnamon, to taste Brand: Timbu Zimt Gemahlen
πΏ Whole Cloves, a few pieces, to taste Brand: Fuchs Nelken ganz
π Splash of Lemon Juice
π Grated Lemon Peel, 1 packet optional Brand: Dr. Oetker Finesse Geriebene Zitronenschale
π¬ 3 tablespoons Panela, to taste Brand: Intertropico Panela Granulada, or AmΓ©rica block Panela
π½ 40g White Corn Flour
π§ 1 cup Water (approximately 240ml)
π§ 3 cups Water for boiling (approximately 720ml)
π¬ 3 tablespoons White Sugar, to taste Brand: Sweet Family Nordzucker Unser Feinster
π Grated Lemon Peel, 1 packet optional Brand: Dr. Oetker Finesse Geriebene Zitronenschale
Instructions
1- Prepare the Purple Api (Api Morado):
- In a mixing bowl, whisk together 1 cup of water and 40g of purple corn flour until smooth and no lumps remain. Let it rest for 1 hour.
- Boil 3 cups of water in a pot, adding ground cinnamon and cloves to taste.
2- Cook the Purple Api:
- Pour the rested flour mixture into the boiling spiced water slowly, stirring constantly with a whisk.
- Add a splash of lemon juice and optional lemon peel for flavor.
3- Sweeten and Finish the Purple Api:
- Gradually incorporate 3 tablespoons of panela, adjusting sweetness to your preference.
- Continue stirring for about 2 minutes until the mixture reaches a smooth, thick consistency, then remove from heat.
4- Prepare the White Api (Api Blanco):
- In another bowl, mix 1 cup of water with 40g of white corn flour, whisking until lump-free and smooth. Allow to rest for 1 hour.
- Boil 3 cups of water in a separate pot. Optionally, add spices similar to the purple Api or use plain boiling water for a lighter flavor.
5- Cook the White Api:
- Slowly add the rested white corn flour mixture into the boiling water, stirring constantly.
- Sweeten with 3 tablespoons of sugar, tasting and adjusting as needed.
6- Finish the White Api:
- Optionally, add lemon peel for flavor, then stir for about 2 minutes until thickened to desired consistency before removing from heat.

Cook Time: 4 minutes (2 minutes per Api type)
Total Time: 1 hour 15-20 minutes
Servings: Yields two servings (one of each Api type)
