For the Citrus Mayonnaise:

Instructions

1- Cook the Bacon:

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with aluminum foil.
  • Lay the bacon slices flat on the lined baking sheet.
  • Bake until crispy, about 15-20 minutes. Remove and drain on paper towels.

2- Prepare the Citrus Mayonnaise:

  • Stabilize a glass mixing bowl with a tea towel beneath it.
  • Add egg yolks, a pinch of salt, and Dijon mustard. Squeeze in juice from half a lemon.
  • Whisk together, then slowly drizzle in oil while whisking until thick and emulsified.
  • Add orange and lemon zests with chopped tarragon. Season with pepper. Whisk again and set aside.

3- Prepare the Avocado Mash:

  • Halve and pit avocados, then scoop flesh into a bowl.
